Lift the tubers carefully, making sure not to damage any with the fork.
Clean off the soil by hand or if its sticky clay give them a good blast with the garden hoze on the lawn.
Put them somewhere dry and airy to dry out for a couple of weeks.
One clean and dried, place in a deep tray or bucket, cover with a general purpose compost (dryer the better) wood shavings should work too.
Don't forget to label them if necessary.
Under a potting shed bench, or such like would be a good place to store them til the frosts a gone next year.
