Beetroot!!

I am a novice veg grower this year and have just harvested some baby beets this evening (whoopee!!).

Can anyone tell me what happens next (BEFORE I can eat them!!)

Do I have to boil them and stick them in a jar of vinegar etc?

twist-dont cut- the leaves off to leave the beetroot bulb-gently boil them and allow to cool-use an oldish saucepan as the boiling causes staining
can be eaten when still warm too-peel the skin off the bulb
Hi deefer--well done --you must be best pleased.As above ,twist leaves off then boil gently until they are soft when you stick a fork in.Drain allow to cool and skin.you can now eat them as fresh beet , or pickle, in a clean screw top jar .I just slice or keep whole the small onesand use malt vinegar mixed with a couple of tea.sp sugar. Don't keep for too long in the cupboard --eat and enjoy.
Therec are loads of recipes for pickling and you will find these as you go along.I tend to keep things simple .

If you cut off the tops or puncture the skin they will 'Bleed' & look anaemic when they are cooked. A pressure cooker is great for cooking them as they take a while.
I love them plain cos they are so sweet but if you want to go for spectacular!!!!!......serve them in a white sauce. Salmon or pork would be good with that.
I wrap mine in foil(with a generous knob of butter(after trimming of course) and bake them on a very low heat,
I make salad out of mine:
Eating Apple diced
Warm Cooked diced beetroot
Red Onion diced
Vinigarette
Mix all the ingredients together and serve at room temperature.
The beetroot makes the apple pink.
I grate mine into a salad uncooked. Lovely flavour raw.
