Last week on River Cottage, the section on using left-over food, the chef made a lemon drizzle cake suitable for coeliacs, using left-over mashed potato instead of flour. I just wondered if anyone had tried it and what do you think.

Im sure if you google recipes for coeliacs you will find some good stuff. I mean why use left over mash potato ? Why not just boil them and use them fresh ? Is he Susan Boyles brother?
