A piece of software called a "Wave Editor" cris.
Goldwave is one. Perhaps "Audacity" might do it as well. There's usually an edit called something like "remove vocals". They don't usually disappear completely, but move way back in the mix so that they're almost inaudible.
Why not look at karoke versions of the songs you want - standard tracks withouit vocals.

It can be done on many tracks by subtracting one stereo channel from the other. The vocal lead is usually centre so it cancels out. Easy to do with most audio editors.

Fiddling with the tone controls in a graphic equaliser to reduce the gain on vocal frequencies can also help.

If you have access to the speaker connections it can be done by connecting a speaker between the same polarity terminals of the left and right channels. Adjust the balance until it cancels.

What ever way it is done it does take out some of the other sound and can make the track sound a bit empty.
