The cruise boats are quite notorious for passengers getting delhi-belly. As long as you know.
Or you could stay at Luxor and take excursions - we used the St Joseph hotel which is simple, clean and incredibly good value. you can watch the cruise boats from the rooftop bar (with pool), watch the balloons coming over at dawn or even take a ride in one, walk up the...

if you book a package here you'll get 3 nights' hotel and 4 nights' cruise (or whatever); if you book 7 nights here you'll end up paying for the same nights twice when you book a boat. Or you can just book 3 nights in a hotel and cross your fingers that you find a cruise on the nights you want. You may do, there are lots of boats on the Nile and probably spare beds. I don't know how the prices pan out. Personally, I'd save the hassle and get a package here (and in fact did so a couple of years back), but you might get lucky.
Weather as Chris says; can get a bit nippy after dark in Aswan/Luxor, if that's where you're planning to cruise.
