The young chef where we had this had been to a number of food fairs recently and his recipe, after trying various ones, was grated welsh strong cheddar, Dijon mustard, creme fraiche, beer, nutmeg and Worcester sauce, spread on toasted bread and grilled. I don’t have the quantities unfortunately. All topped off with a couple of rashers of bacon.
The farmer where we’re staying has given us six eggs and told us to help ourselves to any more if we want them. The yolks were unbelievably bright yellow!
I was in the lambing shed when the farmer and her assistant helped birth twin lambs which had unfortunately died, the ewe lasted a further 24 hours before she too succumbed. All part of farming life.
Togo, we are thoroughly enjoying the island, but then we always do :)
