Never had this before but tried it for lunch today, blooming lovely!
I was always under the impression it had to be cooked in a pan before being spread on toast but this one wasn’t, I imagine because the ingredients used didn’t need cooking first, it had no egg or flour in it.
Cheese on toast pales into insignificance.

Well done Vagus. Hope you are enjoying "the island" Welsh rarebit is indeed delicious but bearing in mind where you are....if you see Anglesey Eggs on the menu order it. I think that The Bull, Beaumaris has/had it on their menu.

Many years ago M&S used to sell tubs of ready-made Welsh rarebit from their chiller cabinets. You simply spread it on toast and grilled it. It was delicious! In these days of fast convenience food, I'm surprised that it's not made a reappearance or been taken up by other supermarkets. (Google shows that there are one or two manufacturers of such products but none are widely available).

There are lots of variations on the recipe. I don't use either flour or eggs, preferring to just chuck in some cheese, beer and mustard, possibly with a drop of milk or a dash of Worcester sauce.
Make it more fun.
Put the sheeps back lags down your wellies first :-)
Not sure what a sheep has to do with Welsh Rabbit.

To make a similar product to the one Buen mentions in tubs, make the roux style with flour etc and you can store that in the fridge until you need it.

The young chef where we had this had been to a number of food fairs recently and his recipe, after trying various ones, was grated welsh strong cheddar, Dijon mustard, creme fraiche, beer, nutmeg and Worcester sauce, spread on toasted bread and grilled. I don’t have the quantities unfortunately. All topped off with a couple of rashers of bacon.
The farmer where we’re staying has given us six eggs and told us to help ourselves to any more if we want them. The yolks were unbelievably bright yellow!
I was in the lambing shed when the farmer and her assistant helped birth twin lambs which had unfortunately died, the ewe lasted a further 24 hours before she too succumbed. All part of farming life.
Togo, we are thoroughly enjoying the island, but then we always do :)
If the yolks were that yellow one wonders what they feed the hens on.

Forgot, some finely chopped red onion in it too, so fine you could barely see it.
Chris, your mention of M&S reminded me of Heinz Toast Toppers, a staple of my halcyon youth. Some of the varieties tasted lovely I can well understand why Heinz eventually delisted the lot.

Apparently Fortnum & Mason do a ready made version in a fancy pot, but at over £12 for 250g I don’t think I’ll be buying any.
