If Prince William became king today would Prince Charles then be known as the King father and the current queen be known as the King Grandmother? Doesn't sound right does it?

No, and no.  If Prince William became king, they would both have to be dead, so they would simply be Queen Elizabeth II and King Charles III (or possibly King George VII, if one believes some rumours).

Let's say we now live in a time when Elizabeth II is dead, and the person we now know as Prince Charles is King, let's say George VII. However, the King is bonkers and has to be confined in a hospital. His eldest surviving son would reign in his place as "Prince Regent" Even though his dad was totally nuts and talking to the trees, for so long as he was alive and didn't abdicate he would be King.
