why is it that people say God does nothing by accident?if we make an error and do not correct it and it changes the outcome of others lives..how can that be acceptable to those we've harmed?

I don't think many people would agree that it is acceptable. What you may be overlooking is that God didn't create the error. If we make the error, we are responsible for the consequences. Remember God gave us free will, and we may choose to throw good sense out the window sometimes, but it was not an accident, it was a choice we made.
