Email Address On Ipad

Hi, does anyone know how to remove an old email address from an iPad 1
And add a new email account?

My mum has given her iPad to my dad and he wants to remove her email address and add his own, so I need to know in basic laymans terms so i can explain it simply to him

I've gone into Settings/email accounts but can't see an option to 'remove account' or 'add new account '?
