The Canary Islands will be warm, but beware, accommodation prices can hike over this winter holiday period.
Questions seeking somewhere with decent weatherin the winter frequently get posted here. While you might well get some pleasant sunshine in southern Europe, you need to go further south for warm weather. That means Africa and the only African tourist destination available on a budget is the Canaries. (While the Canary Islands are politically and culturally part of Spain, a quick glance at the map will show that they actually lie off the north African coast).

Remember though that nothing is really cheap over Christmas and the New Year. Expect to pay at least as much as you would in the peak of the summer tourist season (and possibly quite a bit more).

going a bit further afield, you could try Florida, Gambia or Egypt; it partly depends what sort of holiday you want. But the Canaries are the best place to start looking.
Many years ago I booked a last minute two-week holiday to the Caribbean at a bargain price. If I remember rightly, I arrived back in the UK on the 23rd December. At the time of booking, I asked what the cost of the holiday would be if taken a week later, to include Christmas. I was advised that the price would be approximately double and that it was unlikely that there would be any availability. So now you know what I know.
We were in Tenerife last New years eve for two weeks, lovely warm weather, no rain.
there are plenty of self-catering places and places to eat out if you like that. We went half board in a Hotel.
ASIA is a good option Thailand, Vietnam yes they have seasonal indcreases for hotels but not as much as europe or America and thing out and about are much cheaper, book a hotel with a good breakfast inclused you only need one oter good meal and a snack, helps the budget.

cooksters... what is your budget?

about £1500 ish..
Something else worth knowing with regards holiday availability – is that the limiting factor is the number of seats on flights to your chosen destination. While it is possible for a hotel to be fully booked, almost certainly there are not enough flights arriving (full to capacity) to fill the resort to capacity.
Palma de Mallorca, Spain is a sunny destination. If you stay for a week (Dec26-Jan1?) you can try looking at apartments instead of hotels. Check the airbnb website
