I love them this time of year. Local veg shop has French ones, last few years most have been rotten inside, black.
Lidl sell Italian ones, bit smaller but really good.
I usually boil them to soften the skin, no longer have a coal fire, any suggestions for best way to cook them.

cut each nut in half.
Parboil for approx 10 minutes.
To avoid fiddly pealing, pinch the shells with a pair of long-nose pliers and most should pop out.
Put them in the pan and keep them on the move until golden brown or slightly charred.
I do mine on the top of a wood burning stove in a cast iron skillet.
