Does anyone have any quick recipes for hot and spicy vegetarian food? Preferably that can be made in one pan please?

Hot and Spicy Chickpeas
1 can of chick peas (We use garbanzos) (15 1/2 Oz; 439 gr)
1 medium onion, finely chopped
1 teaspoon ginger, finely chopped
1 clove garlic, finely chopped
1 green chilly, finely chopped
2 medium well ripened tomatoes, seeded and chopped
1 tablespoon fresh coriander chopped
1 tablespoon lemon juice
10 g vegetable oil
Spices:
1/2 teaspoon turmeric
1/2 tablespoon ground coriander
1 tea spoon "garam masala" (equal amounts of Coriander, Green & Black Cardamon, Cinnamon, Cloves, Bay Leaves, Nutmeg, Ginger, Pepper, Cumin.) Although Indian, we get it at an Asian Food Store.
-salt to taste
PREPARATION
1. Drain chick peas, reserving the liquid.
2. Cook the onions, ginger garlic, chilies and turmeric in the vegetable oil until golden and softened.
3. Add the tomatoes and cook to soften, then add the ground coriander and chick peas.
4. Cook for 10 minutes, add the reserved liquid and cook a further 10 minutes.
5. Add "garam masala", lemon juice and stir in the fresh coriander. Cook gently for 2-3 minutes, adding more liquid, if needed, to make a sauce.
Enjoy!

I just realised after re reading my question that it sounded like i was gonna make it now lol. Its for when my fella works away as i have problems with my hands and cant chop meat, i can just about chop veg (why i asked for veggie meals) I get fed up of living on ready meals when hes not here.
Apart from a couple of things we have everything in the house to make that, I will give it a try next time hes away :)

Pixi darlin'..I know just how you feel..I have a problem with the old peeling and chopping..as you know. My hands are getting more like knobbly sausages by the day!

Make chaat:
Potatoes, diced
Onions, chopped
Chick peas, cooked
Garlic
Oil or ghee
chillies
chopped coriander leaves
coriander & cumin
Fry the lot together over a slow heat. Chillies and coriander leaf according to taste. Fab and cheap.
(Even quicker and only for the seriously deranged:)
Chilli sauce on bread.
Love it.

Spahetti all'arrabiata. (Literally 'angry spahetti).
Fry some garlic and red chillies in some olive oil. (Don't let the garlic go brown). Add white wine and reduce by half. Add tinned plum tomatoes and a good dessertspoon of tomato puree. Cook for at least ten minutes. Serve with loads of parmesan or pecorino on spag.
