I'm trying to make my own sandwich fillings for my husband and girls but I desperately need some new ideas. After tuna or chicken with mayo and sweetcorn I get stuck and they end up back on the cheese and ham! I thought a mild coronation chicken would be nice so if anyones got a good recipe for that I'd appreciate it.
Or if anybody's got any new ideas for lunches I'd love to hear them. C'mon people - inspire me!

i like hummous with chopped olives and salad
chicken, bacon and advocado
pastrami with mustard
cheese coleslaw and salad
i vary between breads as well, using pitta's wraps, rolls etc
you could try wondering into a sandwich shop in town and checking out their fillings may give you some ideas
Ingredients
1.5kg/4lb free range chicken
4 spring onions, sliced
6 cloves garlic, peeled
1 tbsp sea salt
10 peppercorns
rice, cooked, to serve
For the sauce
1 tbsp vegetable oil
1 onion, chopped
1 tbsp curry powder
1 tbsp tomato pur�e
85ml/3fl oz red wine
150ml/�pint water
1 bay leaf
salt and freshly ground black pepper
caster sugar
2 slices lemon
squeeze of lemon juice
425ml/15fl oz good mayonnaise
2 tbsp apricot pur�e
3 tbsp whipped cream
Method
1. Place the chicken in a tightly fitting saucepan, cover with water and add the spring onions, garlic, salt and peppercorns.
2. Bring to the boil and simmer for 30 minutes, turning the chicken once during the cooking process. Cover with a lid and switch off the heat. Leave for one hour, then remove the chicken, allow to cool completely, and cut up into portions.
3. Meanwhile, make the sauce. Heat the oil over a medium heat, add the onion and cook gently for 2-4 minutes. Add the curry powder and cook for two minutes. Add the tomato pur�e, wine, water and bay leaf.
4. Bring to a boil. Season with the salt, pepper, sugar, lemon slices and juice. Reduce the heat and allow to simmer, uncovered, for 5-10 minutes. Strain the sauce through a fine meshed sieve and allow to cool.
5. Gradually fold in the mayonnaise and apricot pur�e, to the desired taste. You may want to add more lemon juice.
6. Fold in the whipped cream.

Hhmm, not sure if you're trying to be helpful BBWCHATT or trying to prove a point because I said the search facility was rubbish!
I think I've been taken a bit too literally here - obviously it has occured to me to put jam or egg and cress between two slices of bread but I was hoping for some new ideas and people's tried and tested favourites!

mix a little Pataks tikka masala stuff with hot water to make it into a sauce then add mayonnaise so that you have a lovely tikka sauce. mix in some chicken and you're away to go with a little lettuce and some lovely wholegrain bread.
Or brie.......mmmm...brie with bacon...or cranberry....or onion.....or apple or in fact anything. Think i like Brie too much,lol!
Salmon & cucumber....although thats quite similar to your tuna one i guess.

lol noooooo Yinyang - I totally agree with you that the Search on AB is almost worthless - you would think instead of fixing things that aren't broken, they would fix it instead.
I was just able to find some that we had answered previously that I thought might have some good ideas in them you could use!!!

This one has been a family favourite for three generations, yinyang. The beauty of this is there's no need to butter the bread first. It looks good as a topping on open sandwiches or savoury biscuits with tiny amounts of chopped red or green peppers for colour.
Mash one or two hard boiled eggs. Add strong grated cheese (2-6oz depending on taste). Mix in enough Heinz Salad Cream to make it spreadable.
Extras, if liked - chopped parsley, paprika.
