why do choc chips melt in your hand but not in the oven when you bake cookies?????????

They do, but the cookie dough keeps the melted chip in place until it's removed from the oven and cooled. Notice how the ones on the surface of the cookie, especially the ones on the bottom next to the baking pan are deformed and runny. Notice, also, how the warm cookies allow the chip to "run" when broken apart....
