Has anyone got a recipe for pancakes that will be fluffy light thicker ones than mine please ? I find they taste ok but tend to turn out thin and flat ....flat as a pancake ....but too flat if you see what I mean :-D

I am the pancake queen. Mushroom & spinach pancakes, cheese and veg pancakes, curried noodle pancake.. but my favourite: banana, cream and jam pancake. There are many different recipes for pancakes I'm not sure if you're talking about scotch pancakes, but here are a few tips: use 2 eggs, use 2part plain flour to 1part cornflour, use a mixture of milk and water. Larger or beer into the mix makes incredible pancakes.
Hi bigmamma, I assume you want the thicker american type pancakes? I use half a pint of milk, 2 eggs beaten together. Add 8oz plain flour, 1 teaspoon of bicarbonate of soda and 2 tablespoons of cream of tartar. Mix together. Oil a frying pan well (or they stick) and place small amounts in the oil. When they bubble they are ready to turn. I add blueberries to the raw side before turning. If you are using maple syrup or other syrup you won't need sugar but if you want to leave out the syrup then add between1 and 4 oz of sugar.
