You can freeze pate and cheddar cheese
and you can buy cheesecake frozen ...so
give it a go ....
I often freeze cheese, but I find that strong cheddar, for example, after defrosting, is a bit more crumbly and the flavour isn't quite as good as when it's fresh. But it's still acceptable.
I often freeze cheddar cheese - but as heathfield says, it does go a bit crumbly.... I get around this by grating it then popping it into a freezer proof plastic box - it's quick and easy to defrost then. This same method is ok for parmesan and other hard cheeses.
