Too many to freeze? They will store in daylight proof paper bag.
According to this just dice and freeze. No blanching required.

I have to do LOADS of fried onions for our charity's barbie. Fry 'em over a week or so then freeze. Totally fine. Could be frozen uncooked, just sliced. Good luck with the tears..
