why is it that when ever i fry popadoms they always curl up and never the same as you get from the resturants/takeaways?

does anyone have any good tips to keep the popadoms flat? TIA

Tambo, whitebear means the uncooked ones in a packet, even I wouldn`t attempt them from scratch, used to make a mean naan bread but don`t now theres just me.
all my methods work for the packet ones.

Indian restaurants fry in ghee - if you want the authentic taste.
I do them deep fried, on the grill or if you've got a gas hob, you can 'throw' them on there but you've got to be quick at moving the poppadom around/over
