Does anyone know the importance of sugar in a bread mix? I've heard its supposed to react with the yeast or something, but would would it make a massive difference if I were to leave it out? Thanks.

Yeast is a living organism and uses the sugar as food and produces carbon dioxide, its the carbon dioxide bubbles that make the bread rise and become light and fluffy, without it the dough would stay a solid lump.

You don't need to add sugar to make good bread.



If you leave out the suger you must leave out the salt as well. The yeast will still work but more slowly.
