There's also another shop in Baker st opposite coombes the pet shop. I think there's another called Angelic Hell which my very heavily tattoo'd mate uses but not sure where it is.

I think you would find that all of the Tattoo studios now have to pass the Health and Safety assesment, so it is very hard to find one, which has a bad hygiene environment, unless it's run from someone's kitchen.
As to the quality of the work, no one but you can make that assesment. Don't pick the first with the best pictures on the walls, as most of them are pre-purchased flash posters. Ask for the pictures of their own work. Most have portfolios. Talk to their customers, see what they say.
If you want to have a tattoo done, research is everything and the more you do yourself the better the result. Buy magazines. And if you have a large complicated design, then you might want to invest in it properly since you gonna have it for the rest of your life, and might consider looking outside of Brighton.
