Can you determine how old it is whilst still fresh? so to speak? (can't believe I'm asking just before I eat my tea!)

Make sure you don't freeze it in the ice-cube tray, that's never easy to explain.

How about cutting one through the middle and counting the rings?

Of course you can. Check the date you wrote on the container when you originally froze it ;-)
