Anybody got a recipe which uses scallops, pasta and mozzarella? I have quite a few vegetables and herbs i could add to it.

how about this one, no idea what fiddlehead ferns are though:

Fiddlehead ferns are the ferns you see everywhere, but before the heads have unfurled.
They must be cooked as they are quite bitter when raw. When cooked, they taste a bit like asparagus.
At the moment they are plentiful....and free!

I don't have access to the site ethandron. I don't know why. How are you by the way? When you're next over?
here's the recipe in a nutshell:
4-6 scallops, 1 leek, 4oz ferns (or asparagus, wild greens or chicories), 1 cup white wine, 1 spoon butter, 2 tsps. chilli flakes, salt and pepper.
sprinkle scallops with some chilli flakes. bring water to boil, begin cooking pasta. fry leeks for 5-10mins, add 1 tsp. chilli flakes and ferns. cook for 2 mins. add half the white wine, cover with lid, reduce heat. in another very hot pan, sear scallops, turn when browned. if they stick don't force them but add half cup of wine, wait a moment then wiggle them free. add pasta to fern and leek mixture, turn heat up to medium, add mozarella in chunks and toss quickly. plate up with scallops on top.
sounds very nice, have some scallops in the freezer so might give it a go myself when i've been to the shops tomorrow.

we're over in a couple of weeks, isle de re and isle d'oleron. looking forward to it, seem to remember you saying one of these islands is one of your favourite places? are you having a holiday this year?

Thanks for typing all that out ethandron. Not long to go then before you're over. I was in Vendée the week before Easter (let out a house there to tenants) and it's quite dry. They're on a hosepipe ban already!! Yes, L'Ile de Ré is lovely but my most favourite island round that coast is L'ile d'Yeu as it's so peaceful and a REAL island. No holiday planned as quite honestly I don't feel like going anywhere on my own but have family and friends coming over the summer so that'll be lovely and I will be visiting family too for a few days. Now off to make this recipe without the ferns though!
have you ever read 'coastliners' by joanna harris? it's about an island off the coast of southern brittany, maybe a bit like the one you mention. i really enjoyed it. if it was reachable by bridge we'd perhaps give it a go but it's a ferry trip. we're back again in september though, for another couple of months, trotting round baie du somme and exploring brittany in more detail. maybe somewhere to think about then.
it must be difficult on your own coccinelle, i really can't imagine, but i do hope you enjoy getting out and about with your friends and family. hope you enjoy your scallops too, be interested to hear what they're like. look after yourself, :o)

Hi ethandron. The scallops were lovely only thing was the mozarella pieces all clumped together!!!
