We've got some left over meat from the leg of lamb and I'm looking for ideas. At the moment I am thinking of making a sort of shepherd's pie with a cheesy potato topping, but I'm always open to ideas. I also have plenty of stock for gravy.
Please don't suggest curry - I'm not as tolerant to spice as normal, much to my disappointment.
A hash? Cubed meat, onions, and parboiled diced potatoes fried until crispy. Bubble and squeak cakes... mix the lamb, left over veg and mash...shape into cakes and fry.
I always used to make a hotspot. Easy and simple. Chopped the lamb into chunks, added an onion and the gravy and then sliced raw potato on the top. Popped into oven until the potatoes are cooked and browned.
Chop into biggish lumps and kebab them with tomatoes & peppers - brush with truffle oil and griddle at nuclear temperature for just long enough to char the outside.
You'd have to stick it together with egg & breadcrumbs, ummmm - but it could be OK if the lamb wasn't over roasted - might actually be quite nice with a handful of chopped mint stirred into the mix.
