I love them this time of year. Local veg shop has French ones, last few years most have been rotten inside, black.

Lidl sell Italian ones, bit smaller but really good.

I usually boil them to soften the skin, no longer have a coal fire, any suggestions for best way to cook them.

You can roast them in the oven, or better still in a steel pan or skillet on the hob.
cut each nut in half.
Parboil for approx 10 minutes.
To avoid fiddly pealing, pinch the shells with a pair of long-nose pliers and most should pop out.
Put them in the pan and keep them on the move until golden brown or slightly charred.
I do mine on the top of a wood burning stove in a cast iron skillet.
Use a knife to score an “X” on the pointy end of each chestnut.
Then, place the nuts on a microwave-safe plate, and microwave at one minute intervals, until the outer shell starts to peel back slightly where you made your score (This usually takes 3-4 minutes, depending on your microwave).
Gas mark 6? I don't even know what that is :-)
