I want my boiled eggs so they have runny yolk but completely set whites
How long would people recommend? In cold water to begin with or into boiling water?
I've never bolied an egg but my chef (Mr BD) says start it in cold water and once it starts to boil turn it down to a simmer for 4 minutes. We always use large eggs but don't know if that makes any difference.
If you keep your eggs in the fridge, make sure they are at room temperature before you boil them.Large eggs take about a minute longer than medium eggs. Personally I gently lower them into boiling water and boil for 6 - 7 mins. If you like them runnier than this, boil for a minute less.
I put large eggs in already simmering water for four/half minutes also I prick the bottom through the shell (Big-ender) before hand so they don't crack.
