Is it true that sticking the Avocado stone back in the prepared guacamole stops it from going 'off'?.

Avocado trees emit a hormone that stops the fruit from ripening on the tree, which is why they seem to go off really quickly in stores or at home. Riper avocados actually have less sugar in the flesh - try a fimer one next to a softer one and see which is sweeter.
Lemon juice on a cut surface will help slow the browing which is a reaction to exposure to air, but only suggest do this for a few minutes - and it alters the flavour of course. . . .
And avocados have more fibre than brown bread, more Vit E than almost any other fruit, the same sort of fat/oil as in olive oil i.e.essential fatty acids, they are a good source of Vit B6, and are full of anti-oxidants - so keep munching on them all you want!

I'm with nickmo on this one, Metagirl is right that cling film can help prevent the flesh discolouring but this is because it blocks out the air which causes the flesh to brown. The stone doesnt actually make a lot of difference. Although high in calories avocado is a very good food source as nickmo says in his last paragraph, and should be enjoyed rather than avioded. Better to eat a little of a good food with higher calories in moderation than a pile of junk with no food value even if it has lower calories!!
Hi NN - been trying to get a post (AB been silly today) to argue that as bookernel says - & cheers for that - cling film is advised to be in contact with the avocado to be effective - and if your g'mole has citrus juice in it anyway, - lime lemon, etc - this will help stop the browning.
And avocados might have calories but hardly a carb. in sight. So work that one out. . . .
