since it's becoming increasingly accepted that gender is less about chromosomes, appearance or reproductive ability but more a matter of state of mind not necessarily requiring reassignment intervention (and the gender recognition act 2004 is likely to be amended to reflect this), are the "X-X" denizens of the Kenwood Ladies Pond Association being a tad unreasonable?

//“A recent case at my old university, the University of East Anglia where they have gender-neutral toilets, discovered that a man was using that to harass women in those facilities, and has been convicted on charges. Could she make some comment about that issue and how we protect women from male violence in gender-neutral environments?”//

She did of course come under immense pressure to retract her concern. :))

You've made up a hypothetical situation, and then asked what will happen if that situation occurs.
Here's your answer...
If man wants to rape or sexually assault a woman, the most difficult route he will take would be to do it in a women's toilet.
The easiest route is the option he currently has, which is to grab a woman off the streets.
Just think about it for a moment. A man who claims to be a woman goes into the toilets of a club, right?
He would stand out like a sore thumb. There would be countless witnesses. Women who go to the loo would come out and say, "Blimey...I've never gone to a toilet where there's been a transexual before".
What you would have is witnesses. And someone who is that noticeable would have many eyes on him. That equals witnesses.
That's what would happen in real life. Your hypothetical situation is so very unlikely to happen that it can be discounted.
If a man is going to sexually assault a woman, he's not going to want an audience who will notice him.
It's a daft supposition.

Abd what we are talking about here is female toilets being used by trans women.
The two are not the same.
With the former, you will have lots and lots of men and women using the facilities.
With the latter, the chances of ever seeing a trans woman is miniascule.
And my point remains the same...if a trans woman is really some creep bloke who wants to spy on women, or assault them - in a female changing room, or toilets, he will stick out like a sore thumb, and will be easily identifiable.

How? I can think of one of two transgender people who look nothing like women. They'd stick out like a sore thumb too, so how would you tell the genuine from the creep?
