"might be" "almost exclusively a problem of young black men" is not the same as "carried out by". Are there figures showing who carries out the stabbings, not just who the victims are?

there doesn't appear to be statistics that list perpetrator demographics. however see below a FOI request for a breakdown of crimes recorded during the carnival in 2016; plus a newspaper report on the outcome of one of the most notorious cases from that year. I do not suggest that the report typifies the typical carnival offender.
