Left Over Lamb Ideas

We've got some left over meat from the leg of lamb and I'm looking for ideas. At the moment I am thinking of making a sort of shepherd's pie with a cheesy potato topping, but I'm always open to ideas. I also have plenty of stock for gravy.

Please don't suggest curry - I'm not as tolerant to spice as normal, much to my disappointment.

A hash? Cubed meat, onions, and parboiled diced potatoes fried until crispy. Bubble and squeak cakes... mix the lamb, left over veg and mash...shape into cakes and fry.

It's epic, ummmm - I discovered it in Innsbruck and had it for brunch every day - with a small bottle of lager - sets you up a treat :+)
He loves everything with a fried egg on top. :-)

Well, I normally do poached or friend eggs with bubble & Squeak so that's a jolly spiffing idea, Dave.

My tummy is rumbling now. I've only had a yoghurt and satsuma for breakfast.
hot or cold, whatever you fancy, NoM. I pefer hot too (though with cold green salad) but others may not. Quick to make, either way.
Lamb is quite fatty so I'd always go for hot.

There have been some lovely ideas on this thread so whatever I don't try this time, I'll keep up my sleeve for next time. I think I still have another 2 legs of lamb in the freezer from the last time they were going half price.
I know that this isn't an answer to your question exactly...but we normally slice the remainder, submerge in leftover gravy and freeze.

To be honest, Ginge, that's what I would normally do, however we want something for tonight and don't fancy a roast dinner for a third night on the trot. Additionally I have that pile of potato to use up and I just hate throwing food away...
