I keep mine in the fridge to keep them out of the way but you don't have to, they aren't refridgerated in shops.
No, but if you do put them in the fridge you should take them out at lest an hour before using them. I keep mine in the pantry.
But surely they would keep longer, why do they have egg racks in fridges ?
I heard something the other day about freezing eggs. Anybody done this ? Sounds a bit dubious to me.
Yes you can freeze beaten up eggs and defrost to use in cooking. Egg whites freeze really well, eggs yolks less as they have a high fat content.

Egg racks in fridges are for storing hard-boiled eggs.
The 'official' advice (from the same source used by Woofgang) is that the best place to keep eggs in a domestic kitchen is in your fridge, in order to ensure that they're kept at below 20C, but that you should take them out of the fridge half an hour before cooking them:

That same site used to have a FAQs page (which now seems to have disappeared), where one of the questions was "Why aren't eggs refrigerated in supermarkets?". The answer was that the air conditioning systems in major supermarkets ensure that the ambient temperature never rises above 20C, so no refrigeration is required there.
... but don't use egg whites straight out of the fridge to make a meringue because they won't whip well. The ideal temperature to whip a meringue is room temperature.

The inside of a shop is usually a fair bit cooler than the average domestic kitchen, so unless you have a cold pantry, keep eggs in the fridge.

They need to be kept at a consistent temp which you rarely get in a kitchen.
I cut the use by date off the box and always use them before that date.
