So what happens if they are kept above 20 degrees ?
On my boxed Waitrose eggs, it says "After purchase, keep these eggs in a refrigerator".
Obviously for a reason....that being the most consistant cool temperature in the average house.
Like all fresh produce, things keep fresher longer at a cool temperature than a warm one...common sense and scientifically proven.
>>> So what happens if they are kept above 20 degrees ?

The bacteria in them will develop far faster than otherwise, resulting in the eggs going off far more quickly.

(I've just found the FAQs page that I thought had disappeared from the 'official' advice source: https://www.egginfo.co.uk/egg-facts-and-figures/faqs )
In Ontario, eggs are kept in the refrigerated section of stores so we keep them in the fridge at home. Whether or not they last longer than kept at room temperate I have no idea.
Only if you are American.
Well, golly gee, OG, forgive me, please, for gettin' my geography all screwed up.
I keep mine in the fridge... but they last too long hanging about.
*don't
Regardless of what side of the pond you're from, the fridge is likely to be a place of continuous even temperature.
They can be taken out of the fridge 10-15 minutes prior to cooking to avoid the yolks from breaking.
Thats my choice anyway.

I might regret asking this , but how did OG know that sanmac did not mean Ontario?
You're right, Chipchopper, it doesn't matter which side of the pond you're on. The reason I mentioned how eggs are kept in the stores in Ontario is that I was surprised when someone mentioned on this post that eggs are sold at RT in the UK.
I’ve never kept eggs in the fridge and sometimes they’re hanging around on their stand in the kitchen way past their use by date.
Never had a problem with them either going off or causing stomach upsets. Ever.
I ignore the date on the box, store them in the kitchen and use them until they're finished - this may be 2 days or 2 weeks and it makes no difference. I've never had "off" eggs.
Always keep my eggs in the fridge.
No, some egg producers recommend that you do not keep them in the fridge.
Hotels and restaurants buy eggs in enormous boxes and never put them in a fridge.
If you have a bad egg, you will know as soon as you crack it!
Not bothered what is 'advised', always keep mine in the fridge, always will. I make up my own mind.
C'mon eggs is eggs where ever you're from.
The fridge has always worked for me, even if its just for convenience sake.
