Small "sausage" made from cream cheese wrapped in salmon, buy ready made blinis put some salmon on top and then cream cheese or capers.
Our family have always enjoyed this recipe.
4oz Smoked Mackerel
4oz Soft Cheese
2 Tablespoons Double Cream
Lemon Juice to taste
Salt and pepper
6oz Smoked Salmon
Lemon, Spring Onions and Cucumber to Garnish
Mix all ingredients together (except salmon and garnish) then roll inside a peices of the smoked salmon. Cut to size. Basically smoked salmon and mackeral pate rolls!
There's good quality salmon and not so good just like champagne, wine etc. Make sure you get irish smoked salmon, this is drier and less salty than the scottish and scandanavian salmon which isn't up to par. This salmon served with a squirt of fresh lemon juice (or a cucumber greek yoghourt mix ) is really worth it.
By the way, I'm not at all irish so not promoting but just someone who has had experience over the years with dinner parties and everyone has been overwhelmed with irish smoked salmon..
Take 1 flout tortilla, spread with cream cheese, place some thin smoked salmon on top , season with black pepper and roll the tortilla up. Then slice the tortilla so you have tiny pinwheels. They look p[retty and can be eaten in one bite.
