As long as the sign is clearly visible so that I don't waste time queuing when I have alcohol I don't see the problem - it can be an advantage when I don't want to buy alcohol and can be whizzed through the 'no alcohol' checkout.
Regarding under 18 cashiers, in every supermarket I've been in when I've bought alcohol they just shout to the (older) cashier at the next till that they're serving alcohol, and that person says "ok" and that's it. Never seen a sign saying you can't purchase drink from a young cashier.
If I'd queued and found I couldn't pay for my drinks because the cashier was a strict Muslim, I'd probably lose patience and leave the trolley behind. Not a good business plan by Aldi.
